Vegan Chocolate Cupcakes


This evening, after cooking an amazing peanut sauce stir-fry dinner with Paul, I noticed that we really didn't have any sweets in the house.  So, I grabbed my Vegan Cupcakes Take Over the World cookbook and baked up these delicious cupcakes.  They are chocolate dairy-free cupcakes with vanilla buttercream frosting (also dairy-free).  Let me tell you, like all of the other cupcakes I have baked from that particular cookbook, they are heavenly!  Just the right amount of chocolate-y taste that pairs wonderfully with the vanilla frosting. 

These two cupcakes were quickly devoured by Paul and myself, and you can see my Rilakkuma mug full of coffee in the background.  A super yummy dessert that really didn't take all that long to make!

I should check that book out! I see there is nothing I would call an egg replacer in the cupcake recipe. I have used flax seed meal before (whisked in a little water). Thanks for sharing this!
